I have been on a wheat free journey since the end of last August. I am five months in and here are a few of the benefits I have seen from cutting out wheat:
- ten-pound weight loss
- clearer skin
- elimination of joint pain
- no bloat
- lost a pants size
- reduction of migraines
- return of flexibility
I am now in the process of eliminating the rest of the grains from my diet. I want to find out if this will completely eliminate my migraines, which have been a problem for me since I was sixteen. They are much less frequent now but if all I must do is remove a particular food from my diet that is causing the problem, it is worth it to me to do so! I’ve been learning a lot from the book, Wheat Belly, and you will find my initial progress and thoughts about my experiment with a drastic change in diet over at AlexisMathews.com.
Since eliminating wheat I have become even more creative with my meal planning. This delicious Tuna-Apple Salad recipe has become one of the staples on my lunch menu. I wanted to share it with you, just in case you would like to add an easy yet nutritious lunch option to your own menu planning process.
Romaine lettuce, 2-3 cups torn into bite-size pieces
3-4 ounces tuna salad (mine simply consists of mayonnaise, salt, pepper, and some diced pickles)
1/2 to 1 whole green apple, cored and diced
1. Place lettuce on large dinner plate.
2. Mix up tuna salad and place atop bed oflettuce.
3. Sprinkle diced apples over top of salad.
Wasn’t that easy?! Enjoy this simple salad on its own OR pair it with a favorite container of yogurt and a side of Iron-Skillet Brussels Sprouts and Bacon to round out your meal.
